Cola Barbecue Sauce

A little while back, we got one of those super cool smokers from the good folks at Masterbuilt. I was so happy to finally have one because I knew my husband would take the reins on the whole “smoking deal” and go to town with smoking whatever he could get his hands on. I was right. He loves it. As long as I shop for the meat or fish and tell him what time dinner needs to be ready, he’s all about figuring out the rubs and sauces and timing of the smoking process.  Our favorite thing to smoke is dry-rubbed ribs, and then we slather them with barbecue sauce.  Here’s a homemade sauce I made:  Cola Barbecue Sauce.

I figured this one would be fun for Father’s Day… a gift from Mom of sorts, with a label and all!

Double Berry Puff Pancake

Got red, white and blue on your mind yet? We’re starting to think ahead to 4th of July already. My son is most excited about lighting sparklers. They’re not allowed in California, but luckily we’ll be on the E. coast for the big day so we can easily locate them! My husband is most excited for the food I’m going to make, and I’m most excited about utilizing berries to make some patriotic treats! Let’s start with this one: Double Berry Puff Pancake

It’s definitely a fun summer breakfast treat if you find that you have access to some wonderful, fresh berries.

The recipe starts in the blender. Use your blender (or a mixer) to mix the batter, pour it into a hot, oven-safe skillet, and scatter fresh berries on top.

Move the skillet to the oven, and bake the pancake until it’s puffy and cooked through.

Serve slices with fresh cream or a sprinkle of powdered sugar. My sweets-loving hubby drizzled maple syrup on top too.

Enjoy this special treat. And may you twirl a sparkler or two in the coming weeks… just for fun. Cause when’s the last time you did that, right?

Double Berry Puff Pancake

Yield: 4 servings

Prep Time: 10 min

Cook Time: 20 min

Ingredients:

4 large eggs
1 cup whole milk
1 cup Gold Medal® All-Purpose Flour
1/4 cup granulated white sugar
1/2 teaspoon freshly grated lemon zest
1/4 teaspoon salt
2 tablespoons unsalted butter
1/2 cup blueberries
1/2 cup halved raspberries
powdered sugar, syrup and/or freshly whipped cream for topping

Directions:

1. Preheat the oven to 400 degrees F.

2. Use a blender or hand mixer to combine the eggs, milk, flour, sugar, lemon zest and salt.

3. Heat a 12-inch cast iron skillet over high heat on the stove. Add the butter and melt. Pour the batter into the skillet, then scatter the berries on top. Put the pan in the oven, and bake until puffed and cooked through, about 20 minutes. Slice and serve, topped with powdered sugar, syrup and/or freshly whipped cream, as desired.

Today, I’m very excited to share an incredibly simple red, white and blue, festive 4th of July dessert.  Anyone can make this… ANYONE… even if you’re not a fancy schmancy baker or cook.  It’s just a fun and impressive recipe for 4th of July:  4th of July Fresh Berry Trifles

Berry and Bacon Kale Salad with Blackberry Jam Vinaigrette

Green, leafy kale is among my secret obsessions.  I must admit… it’s better than being obsessed with cream-filled donuts or four-ct. diamonds or loafing around on the couch all day.  Kale is healthy and full of nutrients, and I just happen to think that it’s terrific.  I love it sautéed and simply seasoned, and I especially love it when added to soups.  When I spot a kale salad on a restaurant menu, where it is served raw and tossed with dressing, I don’t hesitate to order it.  For me, a good kale salad is a treat indeed.  Here’s a great salad that showcases this wonderful green:  Berry and Bacon Kale Salad with Blackberry Jam Vinaigrette

Kale is a little different than lettuce.  Lettuce can be drizzled with salad dressing and it’s good to go.  Kale leaves are tougher, so they need a little tender-loving care when utilized for salad.  I like to cut the leaves into small pieces or shreds, and toss them with the salad dressing.  Then let them marinate in the dressing for about 20 minutes before you add in the other ingredients.
